Top 5 Quick Easy Meals

Hi folks,

As time-poor individuals, we don't have the time (nor the energy) to prepare elaborate meals everyday. SO, here are some quick, yummy & easy meal recipes. Ready in 1/2 hr - 1 hr! :) Enjoy!

TOP 5 QUICK EASY MEALS

1. Satay chicken wrap

Ingredients:

Serves 2.

4 pre-marinated satay chicken skewers/ sticks
2 tomatoes
Few leaves of cos / iceberg lettuce shredded finely
Grated parmesan cheese
Caesar salad dressing (you can buy ready made dressing from most supermarkets)
2 Roti wraps

Method:

1. Preheat the oven to 200c and grill the 4 satay skewers for 20-25 min (turning once).
2. Dice tomatoes & shred lettuce.
3. Place roti wraps on hot pan or grill for 1 min (turning once).
4. Place grilled satay skewers in centre of toasted roti wrap, add shredded lettuce, diced tomatoes & grated cheese on the skewers and top with caesar salad dressing. Fold roti wrap - bottom fold to 12pm, left fold to 3pm, right fold to 9pm and voila! A tasty satay chicken roti wrap!

2. Old El Paso Dinner Kit

Here's an easy taco dinner kit that allows you to prepare and dine on tostados in just 20 minutes! Just go to the Old El Paso section in your local supermarket.

3. Chicken Tonight

You can't go wrong with this. It's so idiot-proof - anyone can make this! Go to a supermarket, choose from any one of the chicken tonight sauces, buy 500 gm of diced chicken pieces, follow the steps at back of the jar and away you go! Accompany it with a side of rice, cous cous or pasta. Its up to you! Personally, I like the golden honey mustard and chicken cacciatore. ;)

4. Claypot chicken rice

Ok this is my own version of "claypot" rice - but really it's all cooked in a rice cooker, hence why its much quicker and easier. And it tastes so good too.

Ingredients:

Serves 3

11/2 cups rice, washed and drained
500 gm of chicken thigh fillets cut into pieces
5 shitake mushrooms
3 Chinese sausages, sliced
1 cm thick salted fish, sliced thinly, fried till crispy
1 tbsp dark soya sauce

Chicken Marinade:

2 tbsp light soy sauce
2 tbsp oyster sauce
1 tbsp dark soy sauce
1 tbsp Chinese cooking wine
1 tbsp Worcestershire sauce
1 tsp of ginger paste
1 tsp of garlic paste
1 tbsp sesame oil
½ tsp pepper

Garnishing:

Spring onion chopped

Method:

1. Mix chicken & mushrooms with marinade, season for 30 minutes (or overnight if possible). If using dried mushrooms, soak mushrooms in warm water before slicing mushrooms.
2. Put rice into rice cooker, cover and cook until holes are formed on top. (About 10 minutes)
3. Spread marinated chickens and mushrooms, Chinese sausage & salted fish on top of rice in rice cooker, cover and cook until chicken pieces are cooked (another 15-30 minutes).
4. Before serving, mix up the rice and sprinkle spring onion & dark soya sauce.

5. Tuna & Spinach Pasta

This is one of my faves because it is so easy to prepare yet tasty & delicious.

Ingredients:

Serves 2

1 tin of flavoured tuna (preferably salsa, tomato or chilli)
2 diced tomatoes
3 tbsp tomato paste
2 handfuls of baby spinach
1/2 chopped onion
2 large anchovies dipped in olive oil
1 garlic clove, crushed & chopped fine
1 tbsp olive oil
200 gm of penne

Method:
1. Cook penne separately in a pot of water (drizzled with olive oil and salt) till al dente.
2. Heat a pan, add olive oil, fry onions till soft, add garlic, add tomatoes and fry till softened. Then, add tuna, anchovies, spinach & tomato paste. Simmer for a few minutes.
3. Add cooked penne into pan and stir fry the penne in the sauce before serving.
